Le beurre brut est peu approprié à la consommation et aux usages cosmetiques, du fait de sa forte odeur. En outre, il a l'inconvenient d'être concret à température ambiante et de figer à la surface des aliments.
Les techniques de désodorisation et de fractionnement développées par l'industrie des corps gras, permettent de pallier ces inconvénients.
- La desodorisation
Elle se fait à haute température (220 a 250°C) sous vide poussé (1 a 3 mm Hg). Dans ces conditions, les substances odorantes sont distillées pendant 4 à 6 heures.

Improve melting properties
Hydrogenation is an oils and fats modification process.It is mainly used on vegetable oils like soya, rape, cotton or sunflower to increase their oxidative stability and to improve their melting properties by reducing their degree of unsaturation.
As a result, these oils or fats reach a consistency that is ideal
for use as margarine or shortening components.

The desolventiser-toaster serves the purpose of removing the solvent from the meal, which can be directly used as an ingredient in animal feed compounds.
A desolventiser-toaster consists of a vertical stack of several cylindrical gas-tight pans, each having a steam-heated bottom. In the top trays, solvent is evaporated by simple heating in dry atmosphere. Live steam injection is used in the lower compartments and removes most of the residual solvent from the meal.
The meal is generally dried and cooled in additional pans located below those used for desolventising.

The air entrained into the extractor by the pores of the raw material must necessarily be eliminated, but this operation also entrains some hexane. To minimise this loss, hexane is recovered in an absorption column that uses mineral oil (sometimes vegetable oil).
